wife JENNIFER took over the patisserie in May and have been tempting
tastebuds ever since...
Paul is a perfect example of someone combining the very best of the old and new. Schooled in classic French pastry making techniques at the Culinary Institute of America, Paul has also been eager to embrace the opportunities that today's technology helps to create, including using Escoffier Software in his bustling bakery.
GANACHE was already well known in the Greensboro area when Paul and his wife Jennifer celebrated their Grand Re-Opening in May. They introduced some innovations, updated their fare with the addition of a light luncheon menu, table service, and some of Paul's own specialties. Most notably, GANACHE serves an amazing Chocolate Truffle Torte, which can either be described as sinful or heavenly, depending on your point of view.
In an interesting twist, a cross between an act of fate and a marketing opportunity, Paul and Jennifer were discovered by a whole new set of customers. After Hurricane Fran tore through the Greensboro area GANACHE ended up one of only a handful of eateries, unscathed, with power, able to open. As people returned to work they stopped in out of sheer necessity, only to become regulars once they'd sampled Paul's pastries, fresh baked breads, sandwiches, and the friendly ambiance.
These days Paul is a true foot soldier in the culinary wars, fighting the good fight we all know so well. Having lost a sandwich maker and bread baker pretty much simultaneously, he is doing it all. Even with the flu, and a ridiculous schedule, Paul still manages a great smile and a happy attitude, just one more reason to stop in and enjoy THE GANACHE BAKING COMPANY.
