BOULDER, Colo. – May 31, 2012 -- The tracking of foodservice waste in a foodservice operation has never been so easy using the new ChefTec Waste Tracking Module (WTM) from Culinary Software Services.
The Waste Tracking Module allows for the accurate tracking and analysis of waste in any foodservice operation. The existing automatic ordering capabilities help prevent over-purchasing, a major cause of waste and spoilage. The WTM enhances that capability and provides a way of tracking waste and analyzing exactly why and where waste is occurring. It also provides a way of tracking the cost of the wasted product as well as costs associated with the different waste disposal methods used. Reports provide summary and detailed information on trends related to waste in a foodservice operation.
"Studies have shown that the tracking and analysis of waste in an operation can reduce waste by up to 10%," said Catherine Buresh, Operations Manager. Waste tracking increases profit margins without affecting the customers’ dining experience and less landfill and greener working practices lead to a more environmentally friendly operation."
ChefTec’s WTM allows tracking of waste in various ways, by:
- Station – such as Hot Line, Salad Station
- Loss Reasons – burnt/overcooked, dropped, customer issue, expired, damaged, spoiled
- Disposition – garbage, garbage disposal, pulper, compost bin, donated
- Employee and Shift
Operations can pinpoint exactly where the most waste is being generated and modify working practices to reduce waste and lost profits.
